I haven't shared a recipe with you in a while and today I have a super simple and delicious one to make you drool.
This recipe is perfect when you need a quick, light meal in the summer time.
As is normal with a lot of my recipes, I made it up as I went and didn't really measure anything.
Super helpful, I know.
But the glory of this recipe is that you can add or subtract whatever you want or whatever you may have in the fridge/pantry.
So the measurements below are my best guesstimates.

Stuffed Ground Turkey + Quinoa Peppers
(serves 4)
-1lbs ground turkey
-4 peppers
-1 cup corn (fresh or frozen)
-1 cup chopped onion
-3 garlic cloves (crushed)
-1 can diced tomatoes
-2 teaspoons cumin
-1 teaspoon salt and pepper
-1 teaspoon garlic salt
-1 cup cooked quinoa
2. Brown ground turkey and add seasonings and veggies and let simmer for 15 minutes
3. While the turkey and veggies are cooking, cook quinoa. Once quinoa is cooked, add it to the skillet with the turkey and veggie mixture.
4. Hollow out peppers and fill with turkey/veggie/quiona mix
5. Cook peppers for 20-30 minutes until peppers are tender
