I headed to the pantry to see what I could throw together. Just throwing together a meal without a recipe is way out of my comfort zone but something I'm dying to be proficient at in the kitchen. I am constantly amazed when chefs on tv or blogs can just 'whip up' a recipe out of nowhere! Slowly but surely I am getting the hang of it and forcing myself to do it more often.
This happens to be one of those recipes! It ended up being a big hit with the Mister and I thought it was great too! This would be great with a salad and a big loaf of crusty bread!
Lightened Up Chicken Alfredo and Tomatoes
1lb thin whole wheat pasta (cooked and drained)
1 can diced tomatoes
2 chicken breasts (diced and cooked/grilled)
1 jar light alfredo sauce
1/2-3/4 cup frozen peas
Dash of herbs: oregano, parsley, garlic salt, salt, pepper (to taste)
Parmesan cheese
1. Cook pasta according to package directions
2. Dice and cook chicken in pan
3. Combine alfredo sauce, tomatoes in pan: let simmer 5 minutes
4. Add herbs, salt and pepper, chicken and peas: let simmer and thicken
5. Add pasta to sauce and top with cheese and fresh herbs
6. Enjoy!
P.S. Sorry the picture quality isn't the best on these...my mama had knee replacement surgery yesterday and the interwebs here at the hospital won't let me open picnik :(
