WWAEW: What We are Eating Wednesday

Instead of the usual WIWW post, today I am going to share with you
What We Are Eating Wednesday!
And honestly, the only thing I wore over Christmas break was sweat pants and leggings.
Therefore, no outfit posts. 
But pictures of food are almost as interesting.

As I said the other day; I have constructed a month's worth of meal plans.
To say I am excited about this is an understatement.
I know our lives well enough to know that these plans are not set in stone and subject to change
BUT 
we will do our best to stick to the plans.

I've said it before but I'll say it again...
meal planning really does make your life easier.

So here it goes:
Week 2:
(for Week 1 go here)
Monday: Oven Chicken + Skinny Scalloped Potatoes
Wednesday: Leftovers
Thursday: Lighter Lasagna Soup (I have made this before and it is AMAZING)
Friday: Leftovers
Saturday: Chili Pot Pies

Week 3:
Tuesday: Chicken Cordon Bleu (crock pot)
Wednesday: Leftovers
Thursdays: Roasted Peppers, Potatoes and Chicken Sausage (this is our new favorite meal!)
Friday: Leftovers
Saturday: Hearty Jambalaya

Week 4:
Monday: Crock Pot Taco Soup (my mom's recipe which I have been meaning to share...soon!)
Tuesday: Taquitos (probably add corn and green chiles)

Wednesday: Leftovers
Friday: Leftovers

There ya have it! 
I am excited to carry these plans out!
There are so many recipes in the world I want to try and this is only the beginning!

I could not agree with you more regarding meal planning. I've been doing this for a few years now, it makes life easier AND it saves money at the grocery store!!

I just had lunch not long ago and now you got my tummy all grumbling again. Scalloped potatoes definately caught my eye! YUM.

I wish I was disciplined enough to plan our meals for a month, that is amazing! Everything you planned sounds great, can't wait to hear how they turn out!!
