Recipe : Fiesta Egg Scramble

How about a quick, delicious, protein filled, ready in less than 30 minutes recipe?

Now let me give you a little background on egg based scrambles and our house.
Basically, it goes like this, we love them.  
They are our go to meal, our 'we need to empty the fridge' meal,  and I don't want to cook meal.
They are quick, easy and can include just about anything you have on hand.

Last night we chose to go the Mexican fiesta route.
We had some ingredients left over from a dinner we hosted on Friday and it worked out perfectly.

Fiesta Scramble
feeds 2 : prep 10 minutes : cook 15 minutes
1lb ground turkey
1 pkg taco seasoning
4-5 eggs
1/2 cup salsa (Jack's from Costco is our current favorite)
1/4 cup cilantro, chopped
1 pepper, diced
1/4 red onion, diced
1 sweet pepper, diced
1 cup diced sweet potatoes 
coconut oil
lime to taste
1.  Coat one skillet with coconut oil and add sweet potatoes
2.  While potatoes are cooking, brown turkey (or chicken, beef)
3.  Once potatoes are mostly cooked, added onions and peppers
4.  Continue to saute potatoes, peppers and onions for about 5 minutes
6.  Once turkey is browned, add taco seasoning and water
7.  One meat and seasoning are combined, remove meat from skillet and set aside
8.  Add eggs to skillet and prepare how you prefer (we are an over easy family)
9.  Build your bowl! 
Start with the sautéd potatoes, then layer the meat, eggs, salsa and cilantro and lime
10.  Enjoy!

This looks so good! I'm not a huge fan of sweet potatoes but I bet I could stomach them with the other deliciousness in this recipe :)
