Pin to Present : Zucchini Noodles with Raw Tomato Sauce

We haven't had a legit pasta meal in AGES and Mister and I have both been craving some pasta dishes in our life.  But without the gluten, sugar and fat...sounds fun, right?

So to compensate this lack of real pasta, we have been making a TON meals with zucchini noodles lately.
All thanks to the Veggetti my aunt sent us!
Pad Thai has been at the top of our list, until earlier this week when I made a version of this noodle and tomato sauce recipe.   Speaking of Pad Thai, I think we have perfected our own version of peanut sauce so I will be sharing that soon as well!

But first, the noodle and tomato sauce recipe was SO good I am dying to share it and also participate in Anne's Pin to Present link up today! 

Zucchini Noodles with Raw Tomato Sauce
1lb ground turkey (or chicken)
1 bunch cherry tomatoes, quartered
olive oil
1/3 cup sun dried tomatoes
1 diced pepper
1/2 cup diced onions
2 zucchinis
1tbls minced garlic
parsley
salt and pepper

*Veggetti or spiralizer

1. Brown ground turkey (or chicken).  After the ground turkey is cooked, transfer to another bowl.
2.  Add peppers and onions in skillet to sofen
3.  After a few minutes, add quartered tomatoes, garlic, sun dried tomatoes to skillet
4.  While the veggies are cooking, spiral your zucchini and add it to the skillet
5.  Once the veggies and 'noodles' are soften, add ground turkey to skillet to warm back up and garnish with parsley
*add garlic and olive oil as needed
This was super filling and fresh thanks to all the goodies we were able to use from our CSA box!
I am happy to admit that Mister and I both had 2 bowls because it was SO good.
I was skeptical of zucchini noodles at first but I am a true believer now.  I barely even miss pasta theses days!

Oh, perfect! I've been wanting to try this zucchini noodle business, so now I'll just follow your recipe/tips. Here's hoping I get another giant zucchini in the harvest box when I pick it up in a few hours :)

I think we need a Veggetti like right now. We eat a ton of zucchini and would get a ton of use out of this and it looks rather simple and quick. We love spaghetti squash, and I've tried making zucchini lasagna before. It was really good but a little watery.

sounds so good! i've heard great things about zucchini noodles but i havent tried it yet! i like that you heat it up in the skillet, it'd be too weird for me to it it cold. xo jillian - cornflake dreams
