Recipe : Truffle Stove Top Popcorn

Stove top popcorn is a favorite around our house.
Floyd may be even be a bigger fan of it than Mister and I, but it happens a lot around these parts.

It is super simple to make, cheap, quick and free of any yuck-ness (sorry microwave popcorn, you do not win in our house).
We have it a lot as a late night snack and I also, often, make extra batches for us to take to work as an afternoon snack.

This past week I had the genius idea to add a little truffle oil to our popcorn.
Holy. Delicious.
Katie and Derek know of my love for all things truffle oil and gave me a fabulous bottle for my birthday. 

Here's what you need to make your own.
Truffle oil (could be omitted for non truffle version)
Garlic salt (Trader Joe's grinder is amazing)
Canola oil
Salt
Pepper (not pictured)
Spray butter (optional/not pictured)

Step 1 : Cover the bottom of a large pan with oil.  Drop a couple kernels into the oil.  This is the point when Floyd comes bounding in the kitchen because he knows what that sound means. 
When those pop your oil is ready
Step 2: Cover the bottom of your pan with kernels.
Step 3: Put the lid on the pot, a little off to the side for airflow
Step 4: When pot gets full and there are about 3 seconds between the pops, take the pan off the heat and transfer to a bigger bowl.
Step 6: Drizzle oil (or butter) over the popcorn to coat it.
Step 7: Sprinkle garlic salt, salt and pepper all over popcorn and toss to coat.
Step 8: Enjoy! And try to keep Floyd away. 

Yum? Yum!

I've always wondered how you make stovetop popcorn. I'm totally buying a bag when I get back to Hawaii..this is genius!

I was so excited to try this (I shockingly had all of the ingredients, which is a first for me like ever) but then realized my truffle oil had gone rancid! According to my dad, that is common. So don't try to save the truffle oil like I had been... use it generously and often! I'll give this a shot once I buy some more...

I need to try this with the truffle oil a friend got me. Also, could we just discuss how much better all foods taste when you use quality oil? I've gotten really spoiled with good oil lately, but had to get some cheap stuff from the grocery store when I ran out. It tasted so horrible on my salad after all the really good oil I've used. Check out the Olive Press though. They're based in Napa. They've got some really great stuff (orange oil with fig balsamic on a salad is phenomenal). Clearly I should get a sticker or a cookie for my ability to ramble endlessly about oil! :)

Can you believe that Tim doesn't like truffle oil/anything with truffle in it?! I was just telling him the other day that I wanted to make popcorn with truffle oil instead of regular oil and I got totally shut down. It's hard to be me sometimes, it really is.

My parents make popcorn that way and I love it! Then I forget I can make it at home like that :-) The truffle oil is a perfect addition! May have to make that this weekend. Thanks for the recipe!
