Weekend Wrap Up : Startin Summer

We entered this past weekend with just about 0 plans (rare) and it turned out quite perfectly.

Friday we had an impromptu Mexican dinner with two other couples and it was delicious as Mexican is and the company was fabulous.

Saturday I started the day off at bootcamp and getting my butt kicked.  This whole baby thing sure makes it harder to breathe...
Then Mister and I headed over to the Game Day Feels studio to see them and pick up some one of a kind potholders from Fashion by Mayhem.  I love when I have the chance to see Mayhem and her mama in person and now that she is a budding entrepreneur we knew we had to go support her! 
Saturday evening we had dinner with some new friends and ended up chatting for 3+ hours! Don't you just love when that happens??
We ate at the new Northstar Cafe and it was delish.  However what really intrigued me was basically everything on their brunch menu so we will definitely need to go back!

 I didn't manage to take many photos this weekend so this one of Floyd in the sunshine will have to suffice. 

Sunday was equal parts productive and lazy.  You know, the best way to spend a Sunday.
We had finished church and grocery shopping by 11 am, success.  I then busted out a quick 3.5 mile run/walk and we hit up the pool.  Followed by nappin with Floyd and grilling out.  Success again.

On the menu this week we have:
Monday : Creamy Cilantro Lime Chicken (minus the cream) + corn on the cob
Tuesday : Leftovers + rice
Wednesday : Slow Cooker Thai Peanut Chicken + rice 
Thursday : Leftovers

June Meal Plan

Come summertime I am all about ease, quickness and yumminess in the kitchen.
I would much rather spend my evenings running, playing in the garden and walking Floyd than slaving over the stove.  Don't get me wrong, I love to cook but I love being outside in the summer a tad more.
With obvious reasons, during the summertime we turn to the grill more often or not.  It is not rare for us to throw all meal plans to the wind and throw whatever we can find onto the grill for dinner.
I also usually leave our weekends free of plans because we do often grill or do something with friends.  If friends reach out and ask us to go to Mexican on a Saturday night, we are there before they can pour the salsa. 

And if you are new to our meal plan game, generally I cook/plan enough to have the meals for two nights.  It cuts down on cooking and cost.  If all else fails, we add a fried egg or rice/quinoa/lentils to make it go further. 


Week 1
Wednesday Turkey Burgers with Zucchini (no bun)
Thursday Leftovers over eggs

Week 2
Monday Zucchini Noodles with Cilantro Lime Chicken (so quick and good!)
Tuesday Thai Pizza (gluten free crust, homemade peanut sauce)
Wednesday Leftovers

Week 3
Tuesday Leftovers
Wednesday Lemon Basil Chicken over Zucchini Noodles
Friday Leftovers over rice

Week 4
Tuesday Leftovers
Wednesday Carrot Enchilada Bake (no cheese) + Ground Turkey

Friday Thai Drunken Noodles + Chicken (from a cookbook I am reviewing soon)

Week 5
Tuesday Garlic Chicken + Purple Potatoes + Corn
Wednesday Leftovers

Summertime sides we love:
Fresh corn on the cob
Grilled romaine
Grilled pineapple
Fresh green beans
Grilled veggies
Oven roasted cherry tomatoes

Thai One On

I am lucky in the fact that Mister will eat just about anything.
Anything.
As far as I can recall, there have only been two dishes I have ever made that did not go over well.
And even those I am pretty sure he ate them just not to waste the food.
However, there have been a lot of winners.
We like winners.
And when there's a winner, Mister gives lots of praise and we add it to our 'favorites' list.
We were recently going over our new favorites and realized they were all centered around Thai dishes.

I agree with Mister that all of the following are 100% winners and should appear on your meal plan asap.  

Last night we made this pizza and it took all of our will power not to eat the whole thing.
(I subbed in gluten free crust I had picked up at Aldis.  Be on the lookout for a post about Aldis soon!)
We could barely contain our excitement to eat.  Excuse the messy picture.
Gaby's photo is much prettier.

The next few I believe I have mentioned before but they are worth a mention again in this round up.

Thai Pumpkin Soup made in the Vitamix but easily done with an immersion blender.
Recipe as follows :
1/2 large onion, chopped
1 tablespoon olive oil
1/2 tablespoon tomato paste
1 1/4 cup canned pumpkin
1 tablespoon chopped, fresh ginger
1 garlic clove, chopped
1/2 cup coconut milk
1/2 tablespoon green chilies
1/2 tablespoon lemon juice
salt and pepper

1. Saute onion in olive oil.  Add in tomato paste, pumpkin, ginger, garlic, coconut milk.  Cook until heated through.
2.  Add above into Vitamix, add green chilies and lemon juice
OR
Add in green chilies and lemon juice and use immersion blender

This salad is also one of our favorites.  Before this recipe I had never cooked with cabbage before but we really enjoyed it.  Plus the purple color is beautiful!
We sub in peanuts instead of cashews and I dice up chicken, coat it in corn starch and cook it in a skillet to add to the salad for more protein.  

Honorable mention for pad thai made with the zucchini noodles, also a favorite!

Winter Meal Plan

After a resounding 'yes!' that you wanted some more meal plans to grace this blog...I am here to deliver!  Meal planning combines a lot of my favorite things: food, planning, organizing and spending time with Mister. 

I do not quite remember when I started meal planning but I am glad I did.  It makes my shopping trips on Sundays easier, our weeks smoother, our wallets happier and our waistlines smaller.  
Our lives are hectic enough without having to figure out what is for dinner each night too.  
Normally I try to plan meals that we can have for two nights.
i.e. I do not have to cook as much.

We cook together and eat dinner at home almost every night and I love it.  We splurge here and there and have date nights to try new places but for the most part we are super boring people who eat at home.  BUT I think that makes our date nights and planning a new place to try even more special because we look forward to it so much.  

I also do my best to plan meals that incorporate similar ingredients so I am not buying everything in the store and only using half.  You will see a Thai theme below in the first week...
I also try to mix in a crock pot meal at least every week or so.  Coming home to dinner already made is a form of heaven. 

As far as planning, I pull resources from everywhere.  
Cookbooks, emails from friends, Pinterest, blogs, recipes logged in my brain. 
Lately I have been been scouring Ambitious Kitchen,  What's Gaby Cooking, Gimme Some Oven, Paleomg.

Here is what is on our menu!
Sunday : Thai Quinoa Salad + chicken
Monday : Thai Pumpkin Soup* (SO good)
Tuesday : Thai Saute + chicken
Wednesday : Leftovers
Thursday : Taco Soup
Friday : Taco Soup
Saturday : Fresh tomato sauce* with ground turkey over gluten free pasta
*the Vitamix linked recipes could be made with an immersion blender

Sunday : Chili chicken soup (crock pot)
Monday : Soup leftovers
Tuesday : Gluten free pizza
Wednesday : Bacon lime sweet potato salad + chicken 
Thursday : Leftovers
Saturday : Date night

Sunday : Corn chowder with jalapeños (crock pot)
Monday : Soup leftovers
Tuesday : Skinny honey chicken + quinoa + brussel sprouts
Wednesday : Leftovers
Thursday : Sweet potato, black bean and egg breakfast burrito
Friday : Leftovers
Saturday : Chicken thighs with asian buffalo sauce + rice

Okay, that should get us to February!

Makin It Easier

I am all about efficiency and multitasking.
If you can't be doing 47 things at once why do anything, right??
And lately I've realized that I've subconsciously been doing a few things that are helping me be more efficient and use my time more wisely - 2 huge bonuses in my life. 

Here are 4 things that are making my life easier lately

1.  Remember when you were little and your mom made you lay your clothes out before you went to bed for school the next day?  Well I've started making myself do that for the week.  I try on Sunday nights to corral all of my tops for the upcoming week into one area in my closet.  That way it's just a grab and go situation not a 'hmmmmm what to wearrrr? Oh look 20 minutes have passed and I'm still not dressed.'
And while Floyd is usually my go to getting ready buddy, his ability to pick out outfits isn't the best.

2. Remember way back when and I would put together month long meal plans here on blog?  Yeah I forgot about it too but recently I've jumped back on the bandwagon.  But I can not take all of the credit, Kait sent Casey and I her meal plan a few months ago and it reminded me how stinkin easy it made my life.  So I've started it back up again and it is seriously the best thing.
I could go on forever about my love for meal planning and how much easier it makes your life.  I was thinking of posting the plans again on the blog.  Would anyone be interested in that??

3. I'm not sure where I heard about The Skimm but I am sure glad I did.
Truth time : I am terrible about reading the news and keeping up with current events.
Until, The Skimm entered my life.  Every morning when I wake up I have an email from them that takes me less than 3 minutes to read and gives me snippets of all of the news going on in the world.
Perfect for me - sweet and short and to the point.
Plus it makes watching The Today Show even more interesting because I know more of what Natalie is talking about.

#SheReadsTruth is also an early morning treat in my mailbox.  Casey told me about this quick, short, daily devotional and it is great way to start the day.  It also only takes a few moments to read and I love starting my day with it. You can sign up for that one here.

4. In an effort to have more time in the evenings with my main men, I've been getting my non running work outs in the morning.  Sure this means a 6am call with Tony and P90X2 but when I can come home from work, walk Floyd and be free for the evening, it's totally worth it.  Plus knowing you are starting the day with your work out done feels pretty great.

Dinner of Champs {Academy Awards Menu}

The Oscars always make me feel extra fancy and tempt me to put my wedding dress on and pretend like I'm walking down the red carpet.
(However I try to reserve the dress putting on for our anniversary....so see you in a month!)
So the next best thing to do is break out the bubbly.

Last weekend we had some extra champagne in the fridge (is that a thing?) and because I value my fridge space I decided it needed to be used up.
And Mister vetoed the idea of me drinking it as my dinner so I did the next best thing, found a few recipes to use it in!

So if you need an extra excuse to break out the bubbly for this weekend's Oscars viewing, I have the perfect, romantic meal plan for you!

Champagne Chicken
(adapted from here)
-4 chicken breasts
-1/2 cup (or more) whole wheat flour to coat chicken
-1 cup champagne
-2 tablespoons honey
-1/2 cup orange juice
-2 tablespoons lemon juice
-1 tablespoon olive oil
-1 package mushrooms
-1/3 cup craisins (I forgot to add)
-salt to taste
1. While warming oil in a skillet, coat chicken breasts lightly in oil
2. Once oil is hot, place chicken in skillet and cook on each side until golden
3.  Remove chicken from skillet and set aside
4.  Add champagne to skillet to deglaze and let the champagne reduce
5.  Add honey, juices, mushrooms and salt, let simmer for 5 minutes
6. Put chicken back in skillet, simmer and cover for approximately 40 minutes
7. Add craisins and cook for 10 more minutes

Champagne Risotto
(I always use ValSoCal's recipe)
-4 slices prosciutto
-3 cups chicken broth
-bunch of asparagus, cut into pieces
-2 tablespoons butter
-1 shallot chopped (or garlic in a pinch)
-3/4 cup Aborio rice
-3/4 cup champagne
-1/4 cup parmeasan cheese
salt and pepper to taste
1. Preheat oven to 450 degrees, place prosciutto on cookie sheet and cook for 6-8 minutes until crispy
2. Bring chicken stock to boil, blanch asparagus in boiling broth for 2 minutes.  Remove asparagus and keep broth on a slow simmer
3. In other pot, melt 1 tablespoon of butter, add shallot and cook for 3 minutes.  Add the rice and coat in the butter.  Keep stirring rice for 3 minutes
4. Add champagne and let simmer/reduce for about 3 minutes.  Once reduced, add 1/2 cup simmering broth. Keep stirring until absorbed
5. Continue adding broth, 1/2 cup at a time, until all absorbed- this will take about 20 minutes of stirring
6.  Remove from heat and add cheese, asparagus, salt/pepper and butter
7. Top with crispy prosciutto

And, of course, a glass of bubbly or two!
Champagne is from Kroger for $8.99 and it was delicious!

eMeals = Dreams Come True

I received a eMeals subscription for free in exchange for an honest review, as always, the opinions are 100% my own.
You guys know how I love a good meal plan but you've probably noticed they have been very vacant from the blog lately.

I have still been planning but with us practicing and learning the ins and outs of clean eating we've been in a bit of a rut.  I didn't feel that our plans have been interesting enough to share.
This really drives me insane. 
I've been on the hunt for new, clean recipes and have definitely found some winners (like this) but I am always looking for new recipes and resources.

(I am planning a more detailed post on our clean eating; what we're eating, why and how I grocery shop, for next week.)

Thankfully I have been rescued from this rut...enter eMeals.
As much as I love planning...they DO IT FOR YOU!
Music to my busy life ears.
With eMeals you can choose the right path for you.  You can choose from clean eating, classic, paleo, gluten free, vegetarian and more! You are also able to choose how many people you are cooking for! How genius is that?!
I could honestly pick and choose a little from each one path but I decided to try out the eMeals Clean Eating Meal Planfor 2 path. 
Once your plan is chosen, eMeals emails your plan for the week and a shopping list for your specific grocery store.  I mean, could that be easier?
They send it right to you! It's already done and everything!
 
There is also an iPhone app where you can access your plan and list right from your phone!
I love the convenience of that and not wasting paper printing it out each week. 

I have only just begun to scratch the service of the eMeals goodness but I am already impressed.  For instance I am dying to try the chipotle burgers and florentine lasanga rolls on our plan next week.
These are definitely going to up the dinner game in our house.

Weekend Wrap Up and February Meal Plan

Hey there...who all is a little sluggish today?
They really should start the Super Bowl at like 3 so everyone can get to bed at a decent time.

I was a party of one (well two if you count Floyd) this weekend while the Mister was away having a boys weekend.  
So with that, Floyd and I did not get into too much.

Friday night Mister and I had a low key night of working out and watching a movie.

Saturday Floyd and I lounged around and watched it snow, made Floyd these treats and just hung out around the house.  
Saturday evening I attended Bethany's engagement party with some friends!
SO so excited for them! 

Sunday I worked on a DIY project for Mister for Valentine's Day.
Can't wait to show you guys but you'll have a couple of weeks ;)

And for some exciting news, I have my February Meal Plan for you guys!
As I've mentioned before, I leave the weekends pretty empty because we never really know what is going on and I like to schedule in some date nights as well ;)
After this mama cooks 3 meals a day all week, it's nice to not to have to worry about what we're eating on the weekends.


February 4th-7th
Tuesday: Pesto Ranch Crock Pot Chicken + Brown Rice
Wednesday: Leftovers
Thursday: Work Event

February 11th-14th
Tuesday: Lighter Tastes like Lasagna Soup (this is SO good)

Updated Meal Planning

I mentioned last week that we have slightly updated and revamped our eating and meal plans to go along with our new work out schedule.
(see more about what we are doing now here.)

You guys may have noticed that a few months ago I stopped putting up our meal plans.
Well, that was around the time we started P90X2 and it took me awhile to adjust to the new eating and honestly, our meals weren't that exciting.
Now that we are in a much better groove with our meals and eating, dinner is more exciting.

On a daily basis we eat basically the same things but I jazz them up in different ways.
Here is a basic outline of what we've been eating throughout the day:
Breakfast: 1/3 cup egg whites and no bake energy balls (we are OBSESSED with these and I make at least one batch a week.)
 Morning Snack: 1/4 cup cranberry trail mix (from Kroger: Nuts, craisins, sunflower seeds and pecans)
Lunch: Turkey and cheese sandwich on a thinwich, apple and carrots with hummus
Afternoon Snack: Another energy ball and sometimes 2 pieces of turkey bacon
Dinner: Some variation of chicken and rice/quinoa.  Or one of the meals listed below.

To keep dinner interesting I try to switch up what we are having so we don't get too bored and fall off track.  Mister to 100% content eating the same thing every day.  I am not and really enjoy to have different things to eat at least a few times a week.

Here are some of our dinner favorites and great resources:
Chicken (baked in the oven) with different rubs or sauces
Various Soups
Lots of rice and quinoa
Steamed/Roasted Veggies
 Santa Fe Chicken (crockpot)

I refer to Skinnytaste a lot for recipes, cookbooks I have (really love Taste of Home Comfort Food Diet) and, of course, Pinterest.
I am mainly on the hunt for high protein meals with a vegetable and low carbs.

I am hoping to get back in the groove of posting our monthly meal plans soon if you guys want to see them!

I know everyone says it buuuut I could have never imagined how much blogging has changed my life, upped my DIY skills and photography interests, and brought such amazing, beautiful and talented women into my life.  I have met (in person and online) some of the most incredible ladies in the land.  These have become women that I am so thankful are in my life and happy to call some of my best friends.  Thank you for sticking with Floyd, Mister, myself and TBC these past two years.  We love love LOVE all of you and are so honored you come back day and day again to read what we have to say.

Weekend Wrap Up + August Meal Plan

Happy Monday, friends!!
We had a great weekend in our home town.
We ventured home for a family reunion and to spend 
time with our families.
Floyd absolutely loves going home to Grandma's.
He follows her around non stop and just 
stares at her when she talks to him.
It probably doesn't hurt that she gives him extra food 
and treats every time he does something.
Or nothing.
But that is what Grandma's are for,
aren't they? :)
 Every morning he sits outside her door
until she gets up.
He will not move from that spot until she opens that door.
And then his day is made. 
He always comes home exhausted, full
and ready to move in with her. 

Alright, meal plan time!

Meal Plan: Month of July

July? Really? Already?!
Geeeez.

 I recently stumbled upon (thank you, Pinterest) Iowa Girl Eats 
and am loving her site!
Yummy, easy, healthy recipes
Check check check, yes please! 

I started perusing her site and filling in my monthly meal plan.
I was quickly filling in quite a few days with her meals
and I thought, why not just do a month of her meals and see how it goes?

My race is the end of this month so I knew I wanted to eat extra healthy this month.
(i.e. even more veggies and less Sonic blasts...)

Weekend Wrap Up: Lake George & Meal Plan

Another wonderful summer weekend has come and gone for us.
We spent our weekend with the Beckers up at Lake George on the Michigan/Indiana border.

The weather was perfect, the company was perfect, there were 
doggies swimming and plenty of babies to love on.

Meal Plan: May 13th- 19th

Hope everyone had a great Mother's Day and weekend!
Our luncheon went very well and was a great with our families!

Here is our meal plan this week:
Sunday: Leftovers from the luncheon
  (I'm super excited about this one)
Tuesday: Leftovers
Wednesday: Pizza Soup
  Thursday: Leftovers
Friday: PW's Ranch Style Chicken + Baked Potatoes
Saturday: Date Night!
I'm thinking we will try out Ferraris
We have a Groupon and it has been on our 'to try' list for a long time
